So I just got home yesterday from London, where I just finished my last semester at this shitty university I just transferred out of. Needless to say I am happy to be home so that I can indulge in all the things I couldn’t have in London. Here’s a look at the meals I have made in the last 24 hours. Lots of veggies and super healthy, you will be jelly.
My first meal back: my favorite dinosaur shaped chicken nuggets and fries with a selection of dips; mayo, ranch, honey mustard, spicy mustard, and ketchup.
Breakfast from this morning: oats & nuts toast topped with avocados, arugula, fried eggs and sriracha.
Prep for lunch: ingredients for my super salad include romaine lettuce, arugula, mushrooms, fresh mozzarella, tomatoes, avocados, topped with olive oil, balsamic glaze and parmesan.
Final product: sooo yummy
Prep for dinner: broccoli, mushrooms, arugula, and fresh mozzarella.
Cooking my pasta sauce
The final product: tricolor veggie rotini with garlicky tomato and red wine pasta sauce with the mushrooms and broccoli, topped off with the arugula, fresh mozzarella, balsamic glaze, and parmesan.
