A look back at this week’s best meals

Ever since I’ve gotten home from the dreadful UK, I have been fully taking advantage of the fresh produce here in pdx and cooking every day. Here’s a few of my favorite meals I’ve indulged in. Enjoy!

Brunch from the other day: bagels with cream cheese and tomatoes and a bagel topped with avocados and cheese.

My signature mixed salad: lettuce, arugula, tomatoes, mushrooms, avocados, mozzarella, topped with olive oil, parmesan and balsamic glaze.

Quick and light lunch: sautéed broccoli and mushrooms with olive oil, garlic and lemon juice, topped with some fresh mozzarella, arugula, parmesan, lemon zest and of course balsamic glaze.

Dinner from last night: butternut squash ravioli, topped with fresh mushrooms, arugula, parmesan, olive oil, and a dash of pink himalayan salt.

Lunch from today: took a four cheese frozen pizza from safeway and added fresh slices of mozzarella, mushrooms, parmesan, and topped it off with some arugula and you guessed it; balsamic glaze.

I have also been known to snack on things like kraft mac n cheese, cup o noodles, and tortilla chips with salsa con queso sauce, but those are too trailer park to post here.

2014 Met Gala: Best Dressed

        The annual Met Gala is my favorite event and the biggest fashion event of the year. This year, the Metropolitan Museum of Art honored designer, Charles James, known as ‘America’s first couturier.’ There were some beautiful looks this year, with a lot of people exuding the old school classiness that Charles James represents. My 24 hours of culinary masterpieces

So I just got home yesterday from London, where I just finished my last semester at this shitty university I just transferred out of. Needless to say I am happy to be home so that I can indulge in all the things I couldn’t have in London. Here’s a look at the meals I have made in the last 24 hours. Lots of veggies and super healthy, you will be jelly.

 

My first meal back: my favorite dinosaur shaped chicken nuggets and fries with a selection of dips; mayo, ranch, honey mustard, spicy mustard, and ketchup.
